Lemon muffin
Wash 75g raisins in warm water. Pat dry with a paper towel and roll in flour.

Mash 150 g of butter with 1 cup of sugar. The mass should become fluffy, and the sugar should completely dissolve.

Separate the whites from the yolks from 5 eggs. Place the egg whites in a deep bowl, cover and refrigerate. Place the yolks in another dish and leave on the table.

Add the grated zest of half a lemon to the dough.

Bake the muffin in an oven preheated to 180 degrees for 30-50 minutes. The baking time depends on the thickness of the dough layer. Pierce the cake with a wooden toothpick. If it remains dry, without the dough stuck to it, the cake is ready.

Pour 0.5 cups of kefir into a saucepan. Add 1 teaspoon of baking soda there. Mix everything thoroughly.
