Condensed milk is one of the favorite delicacies of the inhabitants of the entire post-Soviet space. True, in the Soviet Union it was not always possible to buy it freely, but I wanted so much to treat myself to delicious things! Apparently, at this time, homemade condensed milk recipes appeared.
Housewives use recipes for making condensed milk at home even now. Although you can buy a jar of your favorite factory-made condensed milk in almost every store, many people believe that milk brewed at home is healthier, healthier and cheaper than purchased milk.
There are many variations of recipes for preparing this delicacy, but the basis in each of them is whole milk and sugar. Milk is advised to take fatter, so that the condensed milk is "rich". Some people prefer to use powdered sugar instead of sugar - obviously, in order to make the resulting mass more uniform.
One of the simplest recipes for making condensed milk at home is “fifteen-minute condensed milk”. For its preparation, take in equal proportions milk and powdered sugar (granulated sugar) and butter in an amount equal to 1/10 of the mass of milk. So, 200 g of milk requires 200 g of sugar and 20 g of butter.
Naturally, the oil must be natural, with a fat content of at least 82%. You should not save by replacing it with a spread, otherwise condensed milk will not work.
Sugar is added to the milk and stirred until completely dissolved. Put butter in the dish. Bring the mixture to a boil over low heat, stirring constantly. When the foam appears and the milk begins to rise, the fire is added and, continuing to stir vigorously, cook for another 10 minutes. In order to prevent the formation of small sugar crystals, whip the still hot condensed milk with a blender and leave to cool. The product turns out to be quite liquid, but gradually thickens as it cools.
Another recipe for making condensed milk differs from the previous one in a longer process duration. To prepare a sweet treat, in this case, take a glass of whole milk, one and a half glasses of sugar and one and a half glasses of powdered milk. Oil is not added when boiling condensed milk in this way. Some experimenting enthusiasts replace powdered milk with a dry mixture for preparing baby food and argue that the result is no worse.
All ingredients are mixed in a metal bowl and placed in a water bath. The product is prepared within an hour, while occasionally it must be stirred. If you want to get a thicker condensed milk, the cooking time can be slightly increased.
Please note that the mixture will become even thicker after cooling!
Some people prefer to cook condensed milk in a slow cooker. The mixture for this is taken the same as in the previous recipe: powdered and whole milk and sugar. After the ingredients are mixed until smooth, they must be poured into the multicooker bowl and cooked for an hour in the "Stew" mode. In order for the resulting product to turn out to be thicker, it is boiled for a little longer.
Homemade condensed milk can be used in the same way as store milk: for making creams, baking. Or you can simply serve it with pancakes or pancakes, add it to coffee, cocoa or tea. Adherents of homemade condensed milk claim that its properties are not inferior to the purchased one.
