The benefits of raspberries are invaluable! Also, grated raspberries can be added to yoghurts, cottage cheese and ice cream, and delicious fruit drinks with mint can be diluted.

To make raspberries, ground with sugar, tasty, not sour and lose their beneficial properties, you need to know a few simple secrets:

Features of harvesting raspberries:

- It is preferable to pick the berries from the bushes during the day and in clear, sunny weather;

- "Bring to mind" raspberries should be immediately after collection or at least on the same day, as they tend to quickly sour;

- Before directly preparing the workpiece, pour cold, salted water over the raspberries (about 2 teaspoons of salt per liter of water) and leave for 15-20 minutes. This is necessary so that all insects float up, then it remains to drain the water, rinse and sort out the berries. This will prevent spoiled berries from getting into the jar;

- It is important to remember that the raspberries need to be given time to dry, since a wet berry significantly reduces the shelf life of the workpiece;

- Ready, so-called "jam" should be laid out in clean, dry, sterilized jars, and closed with clean lids that can be boiled for 5-7 minutes;

- It is also important that during cooking, the berries come into contact only with non-oxidizing dishes - stainless steel, wood, glass, plastic, etc.

- Experienced housewives advise to cut a circle out of clean white paper and put it under the lid to better preserve the raspberries;

- The main condition is that the more sugar is added to the raspberries, the longer the blank will be stored.

- If suddenly foam begins to appear on the surface of the "jam", it means that the raspberries have fermented. The reason may be the presence of moisture in the jars, insufficient amount of sugar, etc., however, you can add sugar to the blank, boil it and roll it up under an iron lid. You can also make, for example, a very tasty raspberry tincture.

The classic recipe for grated raspberries with sugar

Required Ingredients:

- Raspberries - 2 kg.

- Granulated sugar - 3 kg (proportion 1: 1, 5)

- Powdered sugar - 200 g.

Step by step recipe:

1. Sort the collected raspberries thoroughly, select all the spoiled berries, remove the adhered leaves, remove the stalks, bugs and worms, rinse in cold water and let the berry dry (you can put a thin layer on paper towels).

2. The next step is to add granulated sugar to the raspberries. Next, you should mash the berry with a wooden crush or a clean blender. Thoroughly grated raspberries do not exfoliate during storage and looks appetizing.

3. The resulting mass needs to stand for an hour or two so that the sugar crystals are completely dissolved in the berry juice.

4. In clean, sterilized, dry jars it is necessary to spread the raspberry "jam", leaving a little space on top.

5. Cover the mass with powdered sugar (at least 1 cm high, otherwise the powder will dissolve) to create a so-called "cork", that is, the powder dries up, and a cap is obtained that protects raspberries from contact with air, and, therefore, from the appearance mold.

6. Close the jars with lids and send them to the refrigerator or to the basement, but then it will be necessary to eat raspberries in 2-3 months, while the blank can be stored in the refrigerator for about a year.

Frozen raspberries with sugar

The method of deep freezing of berries, fruits and vegetables is very widespread. This requires a freezer that maintains a temperature of -18 ° C. In such a freezer, raspberries can be stored for a year without losing vitamins and nutrients, that is, until the next season. It is important to choose the right crockery before freezing. The best choice would be plastic containers, cups with a tight-fitting lid, in extreme cases, an ordinary plastic bag. It is best to freeze whole berries (as in the photo). For this, raspberries are poured onto a simple tray in one layer (this prevents the raspberries from sticking together in a lump) and frozen for three to four hours, after which the frozen berries are poured into a bag or container. The second method is that granulated sugar is poured into an ordinary container at the bottom, then raspberries are spread on it, again sugar, raspberries, and so on until the end, but it is important that the last layer is a berry. Cap the container tightly and place in the freezer.

You can also freeze the raspberries in puree. For this, it is best to use overripe berries. To make mashed potatoes, you need a blender, granulated sugar in a ratio of about 1: 2, although in this case you can rely on your taste, since the workpiece will be frozen. Next, pour the mashed potatoes into containers, leaving a little space, since liquids can expand when freezing, and send them to the freezer. If, for some reason, there are not enough containers, then you can pour the puree into plastic bags, and put them in another bag for safety reasons. Remember to turn on the fast freeze. It is better to defrost berries and puree gradually, in the refrigerator compartment, and then enjoy delicious and aromatic raspberries!
