  • - 2 teaspoons of sugar;
  • - 1 teaspoon of fish sauce;
  • - 250 g of rice noodles;
  • - 2 teaspoons of lime or lemon juice;
  • - vegetable oil for frying.
  • Coconut milk mousse with cocoa:
  • - 250 ml of coconut milk;
  • - 2 bananas;
  • - 4 teaspoons of sugar;
  • - 4 teaspoons of cocoa powder;
  • - 7 g of gelatin in plates.

Step 1

On sale you can find coconut milk of different fat content. For the preparation of Asian dishes, a product with 50-60% fat content is recommended. It can be thinned if necessary. For cocktails, mousses, creams, a lighter option is suitable. Choose milk with a minimum of preservatives, it is much healthier. If you plan on making milk at home, grate the flesh of a fresh coconut, pour boiling water over it, let it sit for a couple of hours, and then squeeze it out. The product is stored in the refrigerator for 2-3 days.

Step 2

Coconut milk soup with fish and shrimps

Try one of the popular Thai dishes, coconut milk soup. It can be made with chicken, fish, or seafood. Fill the rice noodles with salted boiling water for 15 minutes. Then fold it in a colander, let the water drain, and spread the noodles on a clean towel to dry. Rinse the fish fillets and cut into pieces. Peel the shrimp. Cut the chili pepper into thin rings, after removing the seeds from the pod.

Heat a couple of tablespoons of vegetable oil in a saucepan, add pepper. Fry it, stirring occasionally, for about 30 seconds. Pour in fish broth and coconut milk. Add ginger, peeled and thinly sliced. Bring the mixture to a boil and cook for about 5 minutes. Place the fish fillet and shrimp pieces in a saucepan and cook for another 5 minutes. Add fish sauce, freshly squeezed lime juice and sugar. Stir the soup, remove the saucepan from the heat and leave the dish to infuse under the lid closed. Place prepared rice noodles in soup, stir and serve on bowls. For extra piquancy, add a couple of drops of sesame oil to each serving.

Coconut milk mousse with cocoa

Very tasty desserts can be made on the basis of coconut milk. Try a gentle cocoa mousse. Pour coconut milk into a saucepan, add cocoa powder and sugar. While stirring, heat the mixture over low heat until smooth. The sugar crystals must completely dissolve. Pour gelatin with cold boiled water and leave to swell.

Step 5

Grind ripe bananas in a blender. Pour gelatin into a saucepan with a milk-sugar mixture, mix everything thoroughly. Put the banana puree in wide glasses, filling no more than a third of the volume. Fill it with milk and chocolate mass. Let the dessert cool and then put it in the refrigerator for 2-3 hours. Serve with biscuits or croutons.
