For pancakes you will need:

- 400 g of wheat flour;

- 800 ml of milk;

- 50 g of vegetable oil;

- 3 eggs;

- 25 g of sugar;

- 3 g of salt.

Cooking pancakes

Beat eggs with sugar and salt. If you want to make thin delicate pancakes, use a whisk. For fluffier pancakes, a mixer will do. The difference is in the enrichment of the beaten egg with oxygen: the more oxygen, the more porous the dough products will be.

Heat milk to 45-55 degrees. It is believed that this temperature is ideal for kneading the pancake dough in this recipe. In the absence of a thermometer, you can "catch" it if you dip the tip of your little finger into milk - it should pinch, but not burn.

Combine warm milk with eggs, stir half of the vegetable oil in the resulting mixture. Then slowly add flour.

When all the flour is dispersed in the liquid fraction of the pancake dough, it must be left to "rest". At this time, there is a certain interaction of products at the molecular level. In everyday language, flour swells and binds better to milk and eggs.
