Instructions

Step 1

Wash the meat and pat dry with a paper towel. Make an incision in the middle of the piece so that it does not reach about a centimeter to the edge. Slice the meat to the left and right, also without completing the cuts. Now a piece of meat can be opened in much the same way as opening a book.

Step 2

Cut the thickened places to soften them. Cover the meat with cling film, then beat it to a thin layer. Wash the pears and cut them into quarters. Remove the core. Cut the pears into strips.

Prepare other ingredients - peel and chop the onion, grate the cheese, wash the greens, chop. Add the chopped pear and stir until smooth. Spread the filling on the meat in an even layer. Leave some blank space around the edges and wrap the meat in a roll. Tie the roll with twine.

Preheat oven to 200 degrees. Season the roll with salt and pepper, brush with olive oil on all sides. Wrap in foil, place on a baking sheet and place in the oven. Bake the ore for an hour and a half. About 20 minutes before the end of cooking, the foil should be cut so that the meat has time to brown. Garnish the roll with herbs before serving.
