Base ingredients:

  • 150 g flour;
  • 150 g sugar;
  • 5 eggs;
  • 1, 5 Art. l. cocoa powder;
  • 25 g vanilla sugar.

Ingredients for the cream:

  • 250 g of cottage cheese;
  • ½ cup sugar;
  • 5 tbsp. icing sugar;
  • 160 ml cream.

Ingredients for the filling:

  • 400 g cherries;
  • 2 tbsp. l. Sahara.

Ingredients to cover the roll:

120 g of chocolate

Preparation:

  1. Break the eggs into a deep bowl and pour the sugar into them. Beat with a mixer (at least 10 minutes) until the mass increases.
  2. Sift flour and mix with cocoa powder. Add to the egg and sugar mixture and stir with a spoon.
  3. Cover the baking dish with pastry paper (so that the edges look well outside the form). Pour the roll dough into a mold. Put the dough in a preheated oven to 180 degrees. Bake for 15 minutes. If the biscuit springs a little when pressed, then it is ready.
  4. Remove the dish from the oven, cover with a clean towel, then gently turn over on the towel. Remove a sheet of parchment from the hot biscuit. Roll up with a roll with a towel. Leave it like this for 6 hours, ideally overnight.
  5. Wash the cherries, remove the seeds. Place in a shallow saucepan and add sugar. Put on fire and cook for 5 minutes. Then put the cherries in a colander.
  6. Soak a biscuit with cooled syrup.
  7. Mix cottage cheese with sugar and beat a little with a mixer. The curd should be smooth and fluffy.
  8. Whisk the cream and icing sugar in a separate bowl. Mix curd mass and whipped cream and spread on a biscuit. Put the cherries on the cream. Then roll the biscuit into a roll.
  9. To decorate the roll, melt the chocolate and spread it over the roll. At the same time, leave a little chocolate. Pour it into a pastry bag with a small hole, draw a pattern on parchment paper (whichever you like best) and send the sheet to the refrigerator. After the jewelry has solidified, insert it into the roll. You can insert decorations by making small holes in the roll. Chop before serving.
