A pressure cooker is a type of pot with a hermetically sealed lid. Due to the increased pressure, dishes are cooked much faster than in a conventional saucepan, which greatly facilitates the life of modern housewives, saving precious time. Shrimp risotto cooked in a pressure cooker turns out to be very tasty.
It is necessary
- Ingredients for 4 persons:
- - 2-3 tablespoons of olive oil;
- - onion;
- - 300 g of rice for risotto;
- - a small glass of dry white wine;
- - 700 ml of fish broth;
- - 400 g of large shrimp (raw);
- - 200 g frozen green peas;
- - chili pepper;
- - zest and juice of 1 lemon;
- - salt to taste.
Instructions
Step 1
Chop the onion, remove the seeds from the chili pepper and chop it finely. Heat the olive oil in a pressure cooker.
Step 2
Fry the onion over low heat until it becomes transparent. Add rice to the pressure cooker, mix thoroughly so that it is completely covered with olive oil.
Step 3
Pour wine into the pressure cooker, stir the rice until the wine has completely evaporated. Pour in the fish broth, close the pressure cooker, when the pressure rises to the maximum, set the timer for 5 minutes.
Step 4
After 5 minutes, quickly reduce the pressure in the pressure cooker (put it under a stream of cold water). Remove the lid, return the pressure cooker to the stove, add the peeled shrimp and green peas. Cook over low heat for a few minutes for the shrimp to change color.
Step 5
Add chili pepper, salt to taste and lemon juice to the rice with shrimps, mix, let the risotto "rest" for a few minutes. Serve with lemon zest.
