Lohikeito is a Finnish fish soup with red fish. The key to the success of this dish lies in the fresh fish and rich pink broth. This soup becomes ideal the next day after cooking, when it is well infused.
It is necessary
- For six servings:
- - 500 g salmon fillet;
- - 500 g of salmon soup set;
- - 200 ml of cream of 10% fat;
- - 50 g butter;
- - 8 potatoes;
- - celery stalk, 1 onion, 1 leek (white part);
- - fresh thyme, bay leaf, dill.
Instructions
Step 1
Put a soup set of salmon (tails, heads, fins), celery, leeks, halved onion, thyme, bay leaf in a large saucepan. Pour all this with three liters of ordinary water, cover the pan with a lid, put on medium heat. Cook for 10-20 minutes. Then add two whole potatoes to the broth, leave for another 20 minutes. Season with salt to taste.
Step 2
Remove the potatoes, mash them in a separate bowl. Strain the broth.
Step 3
Cut the salmon fillet and potatoes into cubes, add the potatoes to the broth first, and after 10 minutes the fish itself.
Step 4
Add cream to mashed potatoes, 1 tbsp. a spoonful of flour (you can not add it), mix thoroughly, send to the finished ear. Next, send the butter, wait until it dissolves in the hot broth.
Step 5
Serve lohikeito with Finnish hot bread and sprinkle generously with fresh dill and black pepper.
