It is necessary
500 grams of zucchini, 200 grams of lettuce, 1 egg, a few sprigs of mint, 1/2 cup of olive oil, 1 tablespoon of balsamic vinegar, 75 grams of bread crumbs, salt and pepper - to taste
Instructions
Step 1
Rinse the zucchini, peel and grate on a coarse grater. Drain the resulting liquid.
Step 2
Add bread crumbs, finely chopped mint and an egg to the courgettes. Season with salt, pepper and stir.
Step 3
Roll small balls out of the zucchini mixture and fry them in hot olive oil (2-3 minutes).
Step 4
Combine balsamic vinegar with 2 tablespoons of olive oil, salt and pepper.
Step 5
Tear the lettuce leaves finely and place in a salad bowl. Top with dressing and lay out the courgette balls. Serve immediately while the balls are hot.
