Ingredients:
- Large onions - 4 pcs;
- Potatoes - 4 pcs;
- Wheat flour - 35 g;
- Milk - 500 ml;
- Butter - 35 g;
- Bacon - 250 g;
- Salt;
- Pepper;
- Seasoning "Provencal herbs" or other seasoning.
Preparation:
- Before you start preparing the base of the dish - bacon and potatoes, you need to prepare the white sauce that is poured over the dish before placing it in the oven. To do this, melt the butter in a saucepan. Pour flour there and stir over low heat.
- When the mixture starts to bubble, reduce heat. Leave the mixture on low heat for a few minutes, then remove the pan from the stove and gradually pour milk into it, stirring regularly.
- Then put the mixture back on the stove. When heated, the sauce will begin to thicken. In order not to form lumps, it must be constantly stirred with a spoon. When the sauce boils, reduce heat to very low and let the sauce simmer. In consistency, the sauce should be as thick as cream. Season with salt and pepper and remove from heat.
- Now let's prepare the main course. Rinse the potatoes, peel and cut into circles. Put in cold water to darken the potatoes.
- Peel and chop the onions.
- Next, the bacon is prepared. Cut the crust off the bacon and chop the bacon slices into small pieces.
- Grease a baking dish (you can take a beautiful fireproof dish) and lay the ingredients in layers. First a layer of potatoes, a second layer of onions and a third layer of bacon. Sprinkle each layer laid with salt and pepper, seasonings chosen to taste. Repeat the sequence of layers, and finally lay out the layer of potatoes - it should be the topmost one.
- Pour the prepared and layered ingredients of the dish with sauce and place in the oven on the middle shelf. The oven temperature is 180-190 degrees. Bake the potatoes and bacon for about an hour and a half. For the last 20 minutes, move the dish higher to brown the top of the dish.
- Garnish with fresh herbs before serving.
