Gazpacho is a traditional Spanish soup. Served cold. Its peculiarity is that all ingredients are used raw. Vegetables are not heat-treated, therefore vitamins are preserved. The soup is very light, especially good in summer. But you can also pamper yourself in the off-season.
It is necessary
- - tomatoes (3-4 pcs),
- - bell pepper (1pc),
- - beets (2 pcs),
- - onion (1pc),
- - garlic (2 cloves),
- - olive oil,
- - salt, pepper, herbs.
Instructions
Step 1
Bake the peppers in the oven (15-20 minutes). Refrigerate, peel off.
Step 2
Scald the tomatoes with boiling water, peel them.
Step 3
Boil the beets, cut into cubes.
Step 4
Grind prepared vegetables in a blender. Add salt, olive oil (2 tablespoons), chopped onion, garlic. Put in the refrigerator, refrigerate. After cooling, the soup can be served.
