  • For the test:
  • Cottage cheese - 450 g
  • Wheat flour - 450 g
  • Sugar - 400 g
  • Eggs - 5 pieces
  • Butter - 150 g
  • Raisins (it can be replaced with dried apricots, prunes, candied fruits, nuts at your discretion) - 100 g
  • Baking powder - 1 teaspoon
  • Salt - a pinch
  • Vegetable oil
  • Paper forms for Easter cakes (size 90 x 90 mm)
  • For glaze:
  • Powdered sugar - 100 g
  • One egg white
  • Citric acid - a quarter teaspoon
  • Confectionery sprinkles

Instructions

Step 1

The most important thing in this recipe is to grind the cottage cheese well (while the fat content of the product does not matter). It can be sent to a blender or rubbed through a sieve so that there are no grains left and a homogeneous mass is obtained, otherwise, instead of Easter cake, you will get a regular cake.

Step 2

Break five eggs into a separate container (leave one egg for the glaze) and beat with a whisk.

Step 3

Melt the butter in a water bath or microwave.

Step 4

In a container, combine grated cottage cheese, sugar (the recipe indicates 400 grams, but if you do not like too sweet pastries, you can add it in a smaller amount). Add a packet of vanillin, a pinch of salt, beaten eggs and melted butter. All this must be mixed well - for example, using a whisk or mixer.

Step 5

Next, add flour sifted through a sieve and baking powder to the mixture (it is not forbidden to replace it with soda).

Step 6

Rinse and dry the raisins well. Add it to the dough and mix everything well with a spoon.

Since not everyone likes raisins, you can replace it with other ingredients to your taste - for example, nuts, prunes, dried apricots or candied fruits. The main thing is to grind such a filling well.

Step 7

Lubricate paper forms for cakes (if you took forms with dimensions of 90 x 90 mm, then 4-5 pieces are enough) with vegetable oil, put the dough in them - it will rise, so it should take a little more than half of each form. The dough must be leveled on top with a slide so that the cakes are neat.

Step 8

Preheat the oven to 180 degrees. Put the molds with the dough in the oven and leave for 35-40 minutes. The readiness of the cakes can be checked with a wooden stick. If cracks appear on top, do not worry - it does not affect the taste, and the unevenness is easy to hide with the help of sugar glaze.

Step 9

Prepare the icing: beat the protein of one egg, icing sugar and a pinch of citric acid with a mixer.

Step 10

Warm, slightly cooled cakes, free from paper form, grease the tops with glaze and decorate with confectionery sprinkles. Easter cakes are ready!

It is advised to serve them on the table after 24 hours - then the dish becomes even tastier.
