Mediterranean-style roast - a delicious and original dish using seafood. It is prepared quite simply.
It is necessary
- - seafood to choose from (squid, mussels, shrimps, octopuses) - 400 grams;
- - medium pink potatoes - 4 pieces;
- - leeks - 2 pieces;
- - Bulgarian pepper - 3 pieces;
- - stalked celery - 1 piece;
- - pitted olives - 15 pieces;
- - semi-dry white wine - 50 milliliters;
- - two cloves of garlic;
- - balsamic vinegar, olive oil, basil, sea salt, Provencal herbs, brown sugar, pepper - to taste.
Instructions
Step 1
Boil the potatoes in their uniforms, cool a little, peel, cut as conveniently. Defrost seafood, dry with paper towel, add a little salt and pepper, drizzle with white balsamic vinegar.
Step 2
Rinse vegetables, pat dry. Cut the leeks into rings, fry a little in olive oil. Peel the bell peppers from seeds, cut, add to the onion, fry. Chop the petiole celery and add to the vegetables. Vegetables should not be cooked for too long - they should crunch.
Step 3
Add balsamic vinegar, sugar, white wine to vegetables. When the wine has evaporated, add the chopped potatoes and olives. Cook for about five minutes, all juices should be mixed.
Step 4
At the end of cooking, add seafood, salt and pepper, add garlic right in the husk, a pinch of Provencal herbs, cook together for another four minutes. Turn off the stove, fish out the garlic, sprinkle the dish with fresh chopped basil, cover with a lid - let it sweat for another five minutes. Mediterranean roast ready, enjoy your meal!
