Delicious and nutritious cookies, somewhat reminiscent of the "Picnic" chocolate bar, perfect for a snack or breakfast. Adding brown sugar will make it even healthier!

- Cookies:
- - 135 g of butter;
- - 110 g brown sugar;
- - 275 g of wheat flour;
- - 1 large yolk.
- Topping:
- - 3 eggs;
- - 330 g brown sugar;
- - 75 g of wheat flour;
- - 1/3 tsp baking powder;
- - 120 light raisins;
- - 180 g of dark raisins;
- - 275 g unsalted peanuts;
- - 135 g of coconut flakes.
Instructions
Step 1
Put the oven to heat up to 180 degrees and prepare a large dish by greasing it with butter.
Step 2
Cut the butter into cubes, place in a small saucepan and put on low heat. Add 110 g of brown sugar and cook, stirring occasionally, until the sugar is completely dissolved. Remove from heat.
Step 3
Sift the flour and add to the butter-sugar mixture. Add the yolk there, mix thoroughly.
Step 4
Put the resulting dough in a mold and smooth with the back of a spoon dipped in water or a silicone spatula.
Step 5
Send the dish to the preheated oven and bake for about 10-15 minutes: the base should only brown a little. Once this has happened, remove it from the oven and let it cool completely. Do not turn off the oven during this: you will still need it!
Step 6
Prepare the topping: beat the eggs with white sugar, add flour sifted with baking powder. Then add all the other ingredients (if the raisins are large, pre-cut them) and mix thoroughly.
Step 7
Place the finished topping on a cooled base, flatten and return to the oven for about half an hour. Cool the baked goods completely before cutting the cookies!
