Rinse the rice in a bowl and cover it with water so that the liquid covers two fingers from the top. Leave the cereal to soak for 1 hour. During this time, the rice gluten will swell, absorbing the required amount of moisture. At this time, get busy cooking meat.

Defrost the meat, wash it and grind it in a meat grinder. If there is no veal, then use any other meat - pork, poultry or beef. The meatballs will turn out even juicier and tastier if you combine two or three types of lean meat in the minced meat. Pass the onion in the meat grinder in the same way.

Drain the water from the rice, fill with water in 1/1 parts and put to cook on the stove. However, do not cover the rice with a lid. When the water boils, reduce heat to low and cook until tender, about 15 minutes.

To please children, do not boil the rice, just soak it. And use it raw. In this case, the grains of rice added to the minced meat will stick out in all directions and look like needles. Long rice will cope with this task. As a result, you can get interesting hedgehogs.

Now knead the meatball blank, adding cooked rice, onions, eggs to the minced meat. Season with salt and pepper as desired. The kneaded minced meat dough should be firm. To check its readiness, lift some of the resulting mass a short distance above the table and release it. When falling on the table, the finished mass should make a resounding slap, and not scatter into pieces.

Next, roll the cakes. Inside each of them there will be a cheese filling. Place exactly 1 teaspoon each in the middle of the circle. Next, fasten the edges of the cakes together so that the filling is in the middle of the meatballs. To make the ball even, shape it with a patting motion. The diameter of the meatballs should be 4-5 cm.

Now preheat the oven to 180-200 ° C. At this time, beat the egg with sour cream. This will be the gravy. Spread a baking sheet with butter or vegetable oil, place the meatballs at a distance of 1 cm.
