- - 80 grams of mozzarella cheese
- - 20 grams of butter
- - 200 grams of strong ripe tomatoes
- - 1 tablespoon flavored vinegar
- - 2 tablespoons of premium olive oil

- - 100 ml fresh cream

Step 1
Cut up the mozzarella; separate the corn from the liquid and beat it with a blender

Whisk 2 eggs and 2 yolks with salt and pepper in a bowl until an airy mixture is obtained.

Combine whipped corn, cream, mozzarella and another pinch of salt and pepper

Grease a rectangular dish with butter, line the bottom with baking paper smeared with butter, pour the mixture into the dish and bake in a water bath in an oven preheated to 180 ° C for 50 minutes or until the mixture hardens

Meanwhile, pour boiling water over the tomatoes, remove the skin and seeds, let the juice drain, then break with a blender, add vinegar and, with the rotating blades, pour in a little olive oil; salt and pepper

Remove the dish from the water bath and set aside for at least 10 minutes before removing the casserole onto a serving plate; cut into rectangular pieces and serve with prepared sauce
