  • For the strawberry salad:
  • - 250 g fresh strawberries;
  • - 1 avocado;
  • - 2 cucumbers;
  • - half a lemon (for avocado);
  • - 60 ml of olive oil;
  • - 40 ml of nut butter;
  • - 20 ml lemon juice;
  • - 1 tsp poppy;
  • - 1/3 tsp each ground black pepper and salt;
  • For carrot salad:
  • - 2 large carrots;
  • - 1 celery root;
  • - half a lemon;
  • - 100 g of small raisins;
  • - 5-6 pieces of dried apricots;
  • - 2 tangerines;
  • - 120 g of natural yogurt;
  • - 50 g of liquid honey;
  • - 5 walnuts;
  • - 30 g of peeled pumpkin seeds;
  • - 15 g of sesame seeds;
  • For beetroot salad:
  • - 2 large beets;
  • - 1 orange;
  • - half a lemon;
  • - 4 sprigs of parsley;
  • - 40 g of sugar;
  • - 40 ml of vegetable oil and apple cider vinegar;
  • - salt.

Instructions

Step 1

Vitamin salad with white cabbage

Wash all vegetables and pat dry. Cut the cucumbers lengthwise into halves and then crosswise into semicircles. Chop the cabbage leaves. Cut the carrots into strips or grate them on a coarse grater. Chop the dill greens.

Step 2

Combine all salad ingredients in a deep bowl, season with vegetable oil, salt and mix well. Let the healthy snack steep for at least half an hour.

Red cabbage salad

Place the walnuts in a sturdy bag and roll over it with a rolling pin or grind the kernels in a coffee grinder. Chop the red cabbage thinly, remember it a little with a spoon or with your hands to give juice, and mix with the nut crumbs.

Cut off the thick stems from the branches of greens, chop it finely together with the onion and transfer to the bulk of the salad. Add a handful of currant berries there, stir everything thoroughly, season with oil, salt and leave for half an hour.

Peel the root vegetables, grate on a Korean grater and squeeze the lemon juice onto them. Divide the tangerines into slices, open them with a knife and take out the juicy center. Soak raisins and dried apricots in hot water for 10 minutes, fold in a colander and chop.

Pour the nuts and seeds into the mortar and crush them with a pestle. Place all food in a salad bowl. Stir honey and yogurt in a cup, pour into salad and stir. Sprinkle it with sesame seeds.

Beetroot salad
