Cutlets are perhaps the most popular minced meat dish; they are easy to prepare and do not require an exact recipe. Cutlets can be made from any type of meat, as well as its combinations. In addition, vegetables, spices, bacon, herbs, cheese and even dried fruits can be added to the minced meat.
Traditional homemade cutlets
Ingredients:
- 800 g pork or ground beef;
- 1 onion;
- 1 potato;
- 1 egg;
- 2 tbsp. tablespoons of mayonnaise;
- 300 g of bread;
- 2-3 cloves of garlic;
- salt pepper;
- flour for breading.
Preparation:
1. Rinse the onion and potatoes under running water and peel them. Cut into small pieces. Peel and cut the garlic in half. Remove the green center and discard it. Pass the pulp of the garlic through a garlic press. Cut the crusts off the bread and soak the crumb in water. After 5 minutes, remove the bread and squeeze it well.
2. Place bread, egg, mayonnaise, garlic and chopped vegetables in a blender bowl. Whisk the ingredients with a hand blender. Add minced meat and mix thoroughly until smooth, you can beat again. Season with spices to taste.
3. With wet hands, shape the minced meat into small oval blanks. Dip each cutlet in wheat flour and fry until golden brown in hot oil. Get a saucepan and other thick-sided cooking container. Put the fried cutlets there, pour in 100 ml of water and put on low heat. Simmer until the meat is fully cooked for 10-15 minutes.
Tsargrad cutlets
Ingredients:
- 800 g ball minced meat (beef and lamb);
- 2-3 onions;
- 2 potatoes;
- 2 carrots;
- 2 eggs;
- raisins;
- white bread, milk;
- parsley;
- salt pepper;
- flour for breading.
Preparation:
1. Wash and peel onions, potatoes and carrots. Cut into large pieces. Soak the crustless bread in milk and squeeze. Place the minced meat, vegetables and bread in a meat grinder or food processor and chop. Beat in eggs, add chopped parsley and spices, mix thoroughly.
2. Rinse the raisins thoroughly under running water, put them in a colander and let the dried fruits dry a little. Form cutlets from minced meat, put 3 raisins in the center of each. Breaded each cutlet in wheat flour and sauté in sunflower oil until golden brown.
Cutlets with cheese on toast
Ingredients:
- 500 g ground beef;
- 50 ml of water;
- 50 g grated cheese;
- 50 g butter;
- 2 eggs;
- 2 tbsp. spoons of bread crumbs;
- salt pepper;
- greens;
- toast bread.
Preparation:
1. Stir the minced meat, drinking water, salt and freshly ground black pepper. Stir the mixture thoroughly and form 8 cakes. Prepare the filling by mixing grated cheese, chilled butter chopped with a knife, finely chopped herbs and spices.
2. Divide the cheese filling into 4 tortillas, top with the rest of the meat tortillas. Connect the edges and form patties. Beat the eggs with a whisk and dip the cutlets in them. Now roll each piece in breadcrumbs. Fry until tender on one side and the other.
3. Dry the toast bread in a skillet or oven. Place a cutlet on each slice, garnish with a sprig of fresh herbs and a piece of pickled gherkin.
