Step 1

Wash the potatoes without peeling, put them in a saucepan with water. Cook in salted water until tender.

Step 2

Prepare a dough from kefir by adding drinking water to it to a total volume of 250 ml. Add salt and flour, replace the dough. The finished dough should be tight and well kneaded. To get the desired result, work on the test for 10-12 minutes. Periodically throw a piece of dough on the table with force to beat it off. Next, cover the semi-finished product, leave to rest for 30-40 minutes.

After boiling the potatoes, drain the water. Cool slightly and peel the vegetables. Puree the potatoes with a crush.

Pass the cheese through a meat grinder or grate. Homemade cheese can replace suluguni. If the cheese is bland, season with salt. Combine cheese with mashed potatoes, mix well. Divide the prepared filling into 12 servings, roll balls from each part. Cover the filling with kitchen napkins to keep it dry.

Prepare a heavy skillet, heat it dry. Melt the butter and drain into a separate bowl. Prepare a separate plate for the finished dish.

Flour the work table, lay out one ball of filling and roll it out. Do this with your hands first, carefully. Put the rolled khychin in a pan, fry on both sides until golden brown. Lubricate the finished product liberally with oil. Fold the finished khychins in a pile. Cut it into several segments before serving.

Serve yogurt sauce with garlic, salt and dill with the addition of kefir to the khychins.
