Curd-honey mousse will serve you as an excellent dessert. The dish turns out to be light and airy, and the berry sauce emphasizes the taste of the dessert.
It is necessary
- - cottage cheese 0% 350 g;
- - light honey 100 g;
- - gelatin 1, 5 tablespoons;

- - Frozen berries of strawberries, blackberries, black currants, cherries 350 g;

Step 1
Rub the cottage cheese through a fine sieve, add honey (always light), beat in a blender. Pour 1/3 cup of water and lemon juice into a small saucepan, add gelatin, let it swell, then put on fire, bring to a boil and cook for 1 minute until the crystals dissolve. Let cool slightly.
Step 2
Introduce the gelatin solution into the curd-honey mass, beat again in a blender. In a bowl, beat the egg whites until they become firm peaks. Into the curd mixture, add carefully whipped proteins with a silicone spatula. Spread the mousse over the silicone molds. Refrigerate for 1-2 hours to harden.
Step 3
If you use frozen berries, pour them into a sieve and defrost, save the juice. Pour berry juice into a saucepan, add honey, gelatin. As soon as the gelatin swells, put on fire and boil for 1 minute until the crystals dissolve. Remove from heat, add berries and cool.
Step 4
Before serving, dip the dish with dessert in hot water for a few seconds and remove the dessert. Put in the middle of the dish, sprinkle with pistachios if desired and garnish with a sprig of fresh mint or fresh berries, pour over with berry sauce.
