Cottage cheese is a product that goes well with cheese, vegetables and various herbs, and therefore you can make a delicious cold appetizer or salad from it.
Ingredients:
- Celery - 2 roots;
- Green apple - 4 pcs;
- Green parsley - ½ bunch;
- Peeled walnuts - 150 g;
- Cottage cheese - 7 tablespoons;
- Sour cream - 150 g;
- Milk - 50 ml;
- Lemon juice - 1, 5 tablespoons.
Preparation:
- Wash the apples well, then peel them off and divide them in half. Cut a core from each half, and divide it into 2 more parts, which should be crumbled into pieces.
- Rinse the celery thoroughly in running water, leave in ice water for 10 minutes. Pass the soaked roots through a coarse grater.
- To prevent chopped apples from darkening during cooking, they must be poured with lemon juice, which can be slightly diluted with cold water in a ratio of 1 to 1.
- Pour all the cottage cheese into a deep bowl, gently mash with a fork or spoon, add milk and sour cream to it. Beat the resulting mass thoroughly with a blender until a homogeneous airy consistency is formed.
- Pour pure walnuts into a hot frying pan without adding oil, fry until cooked. Crush fried kernels with a knife and additionally chop, you can in a blender.
- Almost 100 grams of walnuts can be immediately sent to the curd mass by mixing thoroughly again.
- Squeeze the resulting celery, if necessary, and then send it to the rest of the ingredients.
- Put pieces of green apple into the future salad, beat the mass again with a fork.
- In icy running water, wash a bunch of parsley. Crumble most of it, set aside the rest for decoration.
- Arrange the light nutritious salad in salad bowls, sprinkle on top with small nuts and a sprig of parsley.
