This dish came to us from Chinese cuisine. Usually it is cooked in a wok, but it turns out just as tasty in a regular frying pan. Ideal for lunch.
It is necessary
- 1 leek
- 3 egg whites
- 1 teaspoon of starch,
- 1, 5 Art. spoons of soy sauce,
- 100 grams of peanuts (raw)
- 3 cloves of garlic
- 1 eggplant,
- 500 grams of lean pork
- some green onions,
- 1 cup vegetable oil
- some salt.
Instructions
Step 1
My pork and eggplant, cut into small cubes.
Step 2
Pour starch into a bowl, fill it with two tablespoons of water, stir, add whipped egg whites and a teaspoon of soy sauce, salt a little.
Step 3
Put pork and eggplant in the resulting batter, mix well.
Step 4
Pour the oil into the pan, heat it up. Fry pork with eggplant (portions) over medium heat with constant stirring for two minutes. We transfer the fried meat with eggplant on a paper towel so that the fat is absorbed. After the end of frying, pour out the oil from the pan, but not all, leave about a tablespoon.
Step 5
Cut the leek into rings, chop the garlic cloves in any convenient way. Put in a frying pan with leek oil, garlic, peanuts. Fry with stirring for no more than a minute. Then pour in a teaspoon of soy sauce, add the meat with eggplant and cook for another minute.
Step 6
The pork with eggplant is ready. We lay out the meat in portions and decorate with green onions. Rice and light vegetable salad are great for garnish.
