- • Leeks - 4 pcs.
- For the sauce:
- • Butter - 75 g;
- • Kenyan pepper - 1 pinch;
- • Sea salt - 2 pinches;
- • Lemon juice - 60 ml;

Step 1
Preheat the oven to 180-200 degrees. Place the potatoes on a baking sheet and bake for 75 minutes. Leave to cool slightly, then divide each tuber into two parts and cut indentations in them. Mash the cut out core in mashed potatoes and pass through a sieve.

In one bowl, combine flour, parmesan, most of the chopped green onions (the rest will go for a side dish), nutmeg, a whole egg, egg yolks and spices to taste, and then knead on a floured flat surface to form a dough-like mass …
Step 3
Divide the dough into four parts, and then roll each into a sausage with your hands. Cut the sausage into 17 equal parts, crush each barrel with a fork and form a traditional depression in it. Put the dumplings loosely on parchment paper, cover and put in the cold for a while.

In a non-stick skillet, fry the leek rings (with the addition of oil). Fry over high heat for about 8 minutes, until the onions are charred.
Step 5
For the sauce, pour the cream into a large saucepan and simmer over medium heat for 12 minutes. At the same time, bring a large pot of water to a boil. After boiling, immerse the chilled dumplings in water.
Step 6
After the dumplings float, remove them from the water. After boiling, place the dumplings with a slotted spoon on a greased baking sheet.
Step 7
Slowly beat the butter into the cream. Then add some cayenne pepper, sea salt and lemon juice. Let the cream stand a little.

Now you need to fry the dumplings in a pan with the addition of a small amount of oil. Add 1 tablespoon of vegetable oil and a third of butter to the dish, and then put the dumplings on the fire, cook until a pleasant golden brown crust forms.
