Pasta and tomato salad

A simple and satisfying snack for every day is a salad with curly pasta. A paste in the form of large curls or bows is suitable. The dish that can feed the whole family is served chilled or warm. The grocery set includes ham, but smoked sausages or other meat delicacies are suitable instead.

Ingredients:

  • 250 g farfalle (curly pasta in the form of bows);
  • 150 g ham;
  • 100 g of hard cheese (preferably parmesan);
  • 3 ripe sweet tomatoes;
  • 1 small red onion;
  • green lettuce leaves;
  • 4 tbsp. l. olive oil;
  • 1 tbsp. l. lemon juice;
  • salt and freshly ground black pepper;
  • mustard;
  • chopped basil greens.

Boil the pasta in salted water until "al dente", put in a colander and cool. Chop the onion into thin half rings, cut the tomatoes, ham and cheese into small cubes. Combine all ingredients in a deep bowl.

In a separate container, mix together olive oil, lemon juice, pepper, salt, finely chopped basil. Add mustard to taste and mix thoroughly. Season the salad with the sauce and place on a plate lined with lettuce leaves. Decorate with fresh basil sprigs.

Chicken and walnuts salad

A very nutritious dish worth preparing for the holiday. A simple but very elegant salad is served in tartlets and garnished with parsley or basil leaves.

Ingredients:

  • 300 g chicken fillet;
  • 1 juicy green apple;
  • 300 g cucumber;
  • 50 g of shelled walnuts;
  • a bunch of oakleaf lettuce;
  • 3 cloves of garlic;
  • 5 tbsp. l. refined vegetable oil;
  • 0.5 lemon;
  • salt.

Boil chicken fillet until tender, cool. Cut the apple and cucumbers into strips, fillets into small pieces. Crush the nuts in a mortar into coarse crumbs. In a separate bowl, combine the dressing made from vegetable oil, lemon juice and pressed garlic.

Tear lettuce leaves into a salad bowl with your hands, add cucumber, apple, chicken fillet and nuts. Season with sauce, stir. Serve with croutons or fresh baguette pieces.

Salad "Nicoise" with salmon

A real classic of French cuisine is the Nicoise salad. The tenderness of the fish is set off by potatoes, beans, olives and capers. The dish is hearty, but light, rich in fiber and vitamins. The festive serving implies an artistic layout on the leaves of fresh lettuce; on weekdays, the components can be mixed in a bowl, sprinkled with sauce.

Ingredients:

  • 200 g salmon or other red fish;
  • a bunch of green salad;
  • 120 g of young potatoes;
  • 6 pieces of cherry tomatoes;
  • 10 pitted black olives;
  • 2 eggs;
  • 1 small red onion;
  • 5 tbsp. l. olive oil;
  • Dijon mustard to taste;
  • salt;
  • ground black pepper;
  • 1 tsp capers;
  • 1 clove of garlic;
  • 2 tbsp. l. wine vinegar.

Grill salmon, boil eggs, green beans and potatoes. Chill all products, cut into not too small pieces. Halve the cherry tomatoes. Put salad leaves on a dish, place fish, potatoes, beans, eggs, tomatoes, olives, onion, cut into thin rings on top.

In a blender, combine capers, garlic, olive oil, salt, pepper and vinegar. Season salad with sauce, serve with slightly dried toast.
